Grilled Cheese Sandwiches with Fruit and Vegetables

April is Grilled Cheese Sandwich Month! If you didn’t already know, grilled cheese sandwiches are one of my favorite foods. There’s a misconception that grilled cheese sandwiches can’t be part of a healthy diet but that’s not true! (See my post on Challenging Food Rules). I’ve included a list of grilled cheese sandwiches with fruits and vegetables to add an extra nutritional kick to your sandwich.

Note: Some of these sandwiches include fancier cheeses or additional butter or mayo. If you don’t have these ingredients or want to make your sandwich lighter, use less butter or a part skim mozzarella cheese.

Tip: The key to making a perfect grilled cheese sandwich is using thin slices of cheese and heating over low heat for a long period of time. Trust me, you will be rewarded for your patience!
